Spanish Rice & Quinoa Bowl

1/2 cup long grain white rice

1/2 cup quinoa

2 cups water

1 med onion, small dice

1 carrot, small dice

3 garlic cloves, minced

1 jalapeño, minced (I added a couple more small hotter peppers that I grew).

1/4 tsp paprika

1/4 tsp turmeric

1 tsp coriander

1/4 tsp cumin

1 can crushed tomatoes with green chilis, drained, SAVE JUICE.

  1. Cook rice and quinoa together.

  2. Sauté carrots, onions until soft.

  3. Add garlic, peppers, & spices, cook a bit longer.

  4. Add drained tomatoes, cook until hot.

  5. Move veggie mixture to bowl and add rice/quinoa. Add some reserved juice if needed. (I added about 1/4 cup).
